Everyone Hates Tofu
Everyone hates tofu when it's not cooked properly. Here's one way to cook it: southwestern scrambled tofu.
Step 1: Grab some extra firm tofu. I use a whole block.
Step 2: Slice the block & arrange the pieces on some sort of cloth that will absorb moisture.
We're gonna press the moisture out of the tofu because it's wet, and wet tofu is gross. Fold the cloth over so you've created a cloth sandwich where the cloth is the bread and the tofu is the meat.
This is what your tofu is gonna look like after being pressed for 10-15 mins.
I used a sort of makeshift press: just a cutting board with plates and bowls on top.
Step 3: Pull little chunks of tofu off of the slices so it looks like what's in the bowl below. Roughly the size of scrambled eggs.
Step 4: Combine some spices.
- 3/4 tsp salt
- 1/2 tsp garlic powder
- 3/4 tsp cumin powder
- 1/2 tsp chili powder
- 1/2 tsp tumeric
- add water until it's like a sauce
Step 5: Heat some olive oil in a pan.
Step 6: When your pan is heated, add the tofu and the spices.
Stir until it looks like all of the spices and oil has been absorbed.
Step 7: Chow time.
It's such a filling yet light meal. I love pairing it with a lightly toasted bagel with cream cheese and some fruit.
